ROTTERDAM, Netherlands – August 22, 2026 – Oestercompagnie, a Dutch family-owned oyster company, is highlighting the Oystertainer, a mobile hospitality concept developed in Rotterdam that brings oyster shucking and service directly to guests at events.
Created by founder Matijn Wijn, the Oystertainer combines fresh oysters, professional oyster shucking, service and storytelling. The concept was developed approximately 25 years ago from Wijn’s idea of bringing oysters directly to people rather than asking guests to gather around a traditional oyster bar.
Wijn developed specialized equipment that allows a professionally trained oyster shucker to move freely through an event, open oysters in front of guests and serve them immediately. The approach created a mobile format in which the preparation and presentation of oysters take place directly in front of the guest.
Guests can watch each oyster being opened, ask questions about its origin and flavor, and interact with the person serving it. For event organizers, the format provides oyster service without requiring a permanent or fixed serving station.
“An oyster can be intimidating until someone opens it for you and shares the story behind it,” said Matijn Wijn, founder of Oestercompagnie. “The Oystertainer was created to connect people. The oyster starts the conversation, but the personal interaction is what guests remember.”
The concept has since expanded beyond the Netherlands. Outside the Netherlands, the company operates under the name Red Oyster, with a presence in Antwerp, Turin, New York and London. Oystertainers serve at corporate occasions, private celebrations, weddings, cultural events and international fairs.
In the Netherlands, the terms “Oesterman” and “Oestermeisje” are associated with Oestercompagnie and its mobile oyster service concept.
Juliëtte de Wilde, cofounder and leader of the company’s international brand development, said the human element remains central as the concept enters different markets.
“Red Oyster may cross borders, but the essence never changes. An Oystertainer creates a genuine connection with every guest. That combination of craftsmanship, confidence and personal attention makes the concept understandable in any language,” said de Wilde.
Oestercompagnie is now preparing for the next stage of Red Oyster’s international expansion. The company has not yet announced the destination of its next market and plans to share further details as its international growth continues.
